DIY Raw Vegan Cashew Milk

Hi Friends,

Today we are making Raw Vegan Cashew Milk. I’ve been dying to try to make nut milks for a while, since regular milk just doesn’t rub my stomach the right way.

Why did I choose cashew milk instead of almond milk, you ask?? Because I don’t have to strain cashew milk true cheesecloth. I plan on tackling almond milk next week, so stay tuned for that recipe.

As mentioned before, regular cows milk just doesn’t rub my tummy the right way. It tastes yummy going in, but it gives me the worst gas I’ve ever smelt coming out. Since I live with my boyfriend I pay attention to foods that make me gassy and milk is on the top of that list.

I use almond milk in my smoothies every morning, but I’m getting tired of purchasing it every week. Why not make it myself?

Benefits of Consuming Cashew Milk

  • Cashews are lactose free
  • Homemade Cashew Milk has 190 calories, 10g carbs, 6g protein, 15g fat
  • 1 cup of Cashew Milk contains 15% daily value of Vitamin K
  • Vitamin K aids in blood clotting and building strong bones
  • 1 cup of Cashew Milk contains 13% daily value of Iron
  • Iron helps carry oxygen in red blood cells and supports your immune system
  • 1 cup of Cashew Milk contains 25% daily value of Magnesium
  • Magnesium helps produce energy and synthesizes protein

Raw Vegan Cashew Milk

1/2 cup raw cashews
Water
Sweetener – raw maple syrup grade b, agave nectar or honey
Dash of sea salt
Dash of Cinnamon

Cover raw cashew with water and allow to soak for at least 1 hour (more is better if you have the time)

Drain and rinse

Place soaked cashews and 2 cups water into blender or food processor and process until smooth, at least one full minute

Add a dash of raw sweetener to taste ,I used honey

You can use more or less water to vary the thickness of your raw cashew milk depending on your personal preference
In general you want a 1:4 ratio of cashews to water

You can also strain your milk but you really don’t need to

This stuff tastes great!! I’m never buying nut milk again.

I got this cool bottles and chalk board labels from Cost Plus World Market, only $5.99. I plan on using it for a while.

That’s All Today Folks

It’s nice to disconnect from your phone, tv, and the normal distraction and reconnect with nature. I hope you guys enjoy this weeks challenge

Nutrition Challenge

I challenge you to roast your vegetables this week

Challenge Synopsis

  • You should already be eating 3-4 serving of vegetables a day, which is hard for the average American to accomplish
  • By roasting vegetables you are able to retain the most important nutrients in the vegetables
  • Roasting is easier then most people think, check out the directions below

Why why why

  • Roasting preserves flavor and important nutrients in the vegetable
  • The process of roasting brings out the natural sweetness and intensifies the natural flavors of the vegetables
  • Roasted vegetables come out browned, caramelized, and crispy

Materials
  • Common Vegetables to Roast
    • Carrots
    • Zucchini
    • Yellow Squash
    • Cauliflower
    • Eggplants
    • Mushrooms
    • Brussel Sprouts
    • Bell Peppers
    • Onions
    • Leeks
    • Onions
  • Most vegetables can be successfully roasted
Directions
  • Choose or cut vegetables to similar size *about 1-2 inches
  • Make sure not to crowd them too close together
  • Season with salt, pepper, spices, and fresh herbs

  • Spread vegetables evenly without crowding on a non-stick cookie sheet, roasting pan, or cast iron skillet
  • Preheat over to 350-400 degrees F
  • Bake for 30-45 minutes until vegetables are slightly softened and evenly browned
My take
I’ve been obsessed with roasting vegetables for a long time now. This isn’t my first time sharing my passion on this blog, and I’m pretty sure it won’t be my last.

Since my boyfriend eats meat and I do not, I find it too time consuming to prepare to separate main dishes. Instead of trying to created a vegetarian masterpiece, I coat a few of my favorite vegetables with olive oil, season with salt and pepper, and throw them in the oven. By the time I’m done with my meat fill concoction my vegetables are tender, juicy, and delicious.

I will be sharing some of my favorite roasting recipes throughout the week.

Self-Improvement Challenge

Stop Complaining

Challenge Synopsis
  • Do your best to cut down your complaining this week
  • Identify what triggers complaining rants and try to change your negative patterns
Why Why Why
  • Complaining is toxic
  • Constant complaining makes things seem worst then they really are
  • When you constantly complain, complaining becomes an habit
  • Complaining makes people despondent
  • Complaining favors negative people and promotes bad relationships
Materials
  • Some serious will power and self awareness

Directions

  • Ways to cut back your complaining
    • Change the way you think
    • Allow yourself to vent every once and a while
    • Practice yoga and meditation
    • Remember to be grateful
    • Work on training yourself to be less judgmental
    • Make a list of things you are grateful for and keep them where you can see them everyday
    • Be the change you want to see in the world
My Take
I was taught not to complain while growing up. My parents always taught to be grateful and appreciative of everything we have. But as I get older and older I find myself complaining a little more every day. I always feel dirty about myself after, I feel like I need to take a shower and wash away all of my negative thoughts and feelings.

I’m taking this challenge to heart just like I’m hoping all of you do.

That’s All Today Folks!
Blessing,
Mary

Happy Mother’s Day!

I celebrated Mother’s Day by hanging out with my Mother all day yesterday. She came over around 12:30pm and we snacked on some goodies from my local farmers market.

I whipped together this delicious Pomegranate Punch. I Purchased freshly cold press extracted pomegranate juice at the farmers market for $10 a pint. It was expensive, but it’s Mother’s Day so I decided to splurge.

Pomegranate Punch

1 pint Freshly Cold Press Extracted Pomegranate Juice
1/2 cup Fresh Pomegranate Seeds
3 cups Soda Water
2 cups Filtered Water
3 tbs Agave Nectar

Mix together and enjoy!

My Mom loved her Pomegranate Punch and she couldn’t believe whipped it up so fast.

The table also featured:
Blood Oranges
Strawberries
Apricots
Low Fat Vanilla yogurt
Thinly Sliced Almonds

It was the perfect snack. She really enjoy the beautiful presentation, her eyes beamed with pride the entire time.

My Mother supports this blog 100% but I tried to make sure she didn’t see any posts from last week so she would be surprised when it came time to open and go through her Relaxation Basket.

I was unsuccessful, she knew exactly what she was getting and she couldn’t wait to hold all of her goodies in her hot little hands. As honored as I am that she keeps up with my blog, I was slightly disappointed that I didn’t surprise her. It reminded me of the good old days, it’s always been hard to pull a fast one over on Super Mom, she’s just that good.

I added a few extra goodies to her relaxation basket.
I made the abstract drawing sitting behind the basket, My Mother loves Ciroc Vodka so I added some little bottles for her to enjoy, a heart shaped snow blog personalized with a fun picture of my Mother and I together, I toped of the basket with a lavender scented votive candle.

The rest of the day was spent eating dim sum, garlic crab, and pasta while reminiscing about good times from our past. My boyfriend even tagged along helping us snack and driving us around all day. We sent her home full of food and love around 9pm.

Yesterday was a great day. I try to make my Mother feel special and appreciated throughout the year, but Mother’s Day is always special to me.

Happy Mother’s Day Friends

Blessings!

DIY Bottle Cap Picture Magnets

Hi Friends,

Today we are tackling Bottle Cap Picture Magnets.

I originally set out to create plastic pendents with personalized pictures, but I couldn’t find any round plastic pendents. I was frustrated and ready to give up and move on to the next project when I saw bottle caps. If I was in a cartoon a light bulb would have appeared above my head as soon as I saw them.

Why not create bottle cap picture magnets instead. The bottle caps were only $3.99, I picked out some serious jewelry glue to make sure the pictures would stick and the glue would dry clear.

Then I ran down an employee to help me find a circular cutter. I knew this was the only missing piece to really knocking this DIY craft out of the park. I was not willing nor did I think I would succeed in cutting perfect circles. After about 5 minutes we decided on a 1 inch-2.54cm circular hole punch made by Recollections.

My next stop was Kinko’s. I needed to print out some pictures that would fit in my bottle cap frames. I found that wallet sized pictures worked perfectly.

The project came out divine. I gave a few of these magnets to my boyfriends Mother, with pictures of her new Grandson in it and she loved it. I think this present will make any ones heart melt.

Enjoy this quick, easy, and cheap project

Bottle Cap Picture Magnets

You need:
Bottle Caps – $3.99 Michael’s
Wallet Size photos – $10.00 Kinko’s
E600 Jewelry and Bead glue – $4.99 Michael’s
Magnet strip, with adhesive on one side – $6.99 local hardware store
1in-2.54cm hole punch *mine was made by Recollections$10.99 Michael’s
Scissors

Take your bottle caps out and arrange them cap side up

Use your hole punch to cut out faces on your wallet side photos

Squirt a little glue in the middle of your bottle cap
&
Gently slide your picture into the bottle cap

Cut circles out of your magnet strip

Peel off adhesive paper and stick magnet circle to the back of your bottle cap

You’re done!!!!

This project took me about 30 minutes in total. The hardest part was cutting the magnet strip, and it wasn’t hard at all. The fun part is cutting out the pictures with your over-sized hole punch.

I love crafting and I hope that some of my recent projects have inspired you to Do It Yourself

Blessings Friends,

I’d never heard of Bath Tea and now I’m hooked. It only took 15 minutes to whip together and it was super cheap. It transformed my bath time into a luxurious spa treatment

Lavender Shortbread Cookies

Combine powdered sugar and softened butter mix until creamy

Add flour and salt

Add dried lavender and lemon zest until incorporated
Mix until just combined

Remove dough from food processor on a large piece of parchment paper

Gently form dough into a ball, dough will be sticky

Chill dough for at least 4 hours

Roll out dough to about 1/4 inch thick

Cut desired shape, I used a square cookie cutter
Sprinkle with coarse sugar (optional)
Bake for 13-15 minutes

These cookies are scrumptious. I was a little nervous about adding lavender to my cookie batter but they turned out delicious.
